Cooking With Mamma V

Good days Foodies!
Cooking is my passion. I always enjoyed being in the kitchen. I like creating new recipes and cooking my Italian family recipes. I'm blessed to have had the opportunity to learn the northern and southern cuisine. I'm from the north and my husband from the south of Italy and the two cultures gave me large selection of recipes to cook. Italy is so vast in culinary tastes, it has 20 regions and each regions has their traditional dishes, plus each families has their own family recipes and everyones recipe is the best. However, there are certain traditional regional recipes, you are not to change ingredients. Example the traditional Carbonara is a dish from Rome made with eggs, Pecorino Romano, and Guanciale (pig jawl). You can substitute Guanciale for pancetta (pork belly) or pancetta affumicata and substitute Pecorino Romano for Parmesan cheese, but I'm going to tell you, you'll be frown upon.
