Why are we so fond of Neapolitan style pizza?
The best bread we bake in our oven is the Neapolitan style pizza, we love it very much because it reminds us of the taste of the tanoor bread that we used to enjoy eating in Tartous, Syria.
Neapolitan pizza dough contains the same ingredients as tanoor bread: water, salt, yeast, and flour.
The two breads are similar in texture and taste when exiting the horizontal oven after exposure to a thick flame, and exiting the vertical tanoor after exposure to the sudden heat of the thick embers.
Add to that the similarity in the softness of the bread, the crunchiness of the edges, and most importantly the smell of fresh bread.
