In this video, my grandma "Popo" shows us how to make another noodle dish. Cantonese pan fried noodles with a gravy sauce. (CORNSTARCH) This is something that I remember going to Hop Lee on Mott Street (NYC Chinatown) to always get with my family.

The restaurants always make this dish very well. You can customize it with any meat, vegetables, or seafood that you would like.
This recipe has no exact measurements :)
Ingredients:
Vegetables
Carrots
Onion
Celery
Cabbage
Napa Cabbage
Snow Peas
Meats:
Chicken Breast
Pork Shoulder
Marinade
Oyster Sauce
White Pepper
Light Soy Sauce
Cornstarch
Neutral Oil "Add it in after the other ingredients"
Shrimp Peeled, Deveined, and cut
Additional Ingredients:
White Pepper
Oyster Sauce
Cornstarch
Chicken Broth
Neutral Oil
Hong Kong Style Cooked Pan Fried Noodles (Roughly 1 whole package feeds 4-6)
Preparation:
Cut & marinade your meat or meats. Then wash and cut all your vegetables. Set the vegetables aside in a bowl of water to soak. Next peel, devein, and cut your shrimp. Then take your noodles and rinse them under warm water to drain some of the starch out. If you froze the noodles, let them defrost for a couple of hours and repeat the rinsing process.
Cook your vegetables in one pan with a splash of water, don't add the snow peas in right away, save those for the end. Then in a large pan with some oil add your noodles and pan fry them on medium heat until they develop some color. Keep an eye on them and flip them because they will burn. When the noodles are cooked and crispy "not burnt" remove them from the pan. Then you can stir-fry your meats in some oil, then add your vegetables including the snow peas into the pan with the meat followed by your shrimp. Adjust seasoning by adding some more soy sauce, oyster sauce or white pepper. Add some chicken broth or water from the vegetables. Then add your cornstarch slurry into the pan and it should thicken up. Top off the noodles with the sauce and there you have it.
