Rye Bread with Chestnut (2pc)
Ingredients:
Chestnut(without outer shell) 200g
Drinking water 600g + brown sugar 10g*
Nuts of your choice 20g
Bread flour 210g
Whole wheat flour 20g
Rye flour 20g
Sugar 10g
Instant yeast 2g
Salt 5g
Drinking water 100g
Brown sugar water 100g*
Bread flour + Rye flour some (for coating)
*Preheat
*Bake 230C 15min (with steam) + 230C 15min
Remarks:
1. Use luke warm liquid if weather is cold (lower than 15C). Use icy liquid if weather is hot (higher than 30C).
2. Individual oven might have different characteristics, adjust baking temperature and time accordingly.

栗子(去殼後) 200克
飲用水 600克 + 黃糖 10克*
自選果仁 20克
高筋麵粉 210克
全麥麵粉 20克
裸麥粉 20克
糖 10克
即溶酵母 2克
鹽 5克
飲用水 100克
黃糖水 100克*
高筋麵粉+裸麥粉 適量 (灑麵包面用)
*預熱
*烘烤 230度 15分鐘 (有蒸氣) + 230度 15分鐘
備註:
1. 冬天天氣(低於15度)宜用暖水. 夏天天氣(高於30度)宜用冰水.
2. 每個焗爐/烤箱有自己的個性, 可按其個性調節溫度和時間.
