In this video, we make summer sausage out of some venison. We do two different flavors, jalapeno popper and taco.
The recipe for the jalapeno popper is :
5lbs ground meat
5 Tablespoons Morton Tenderquick
2 1/2 teaspoons garlic powder
3 Tablespoons coarse ground black pepper
2 1/2 teaspoons onion powder
1 Tablespoon Peppercorns
1/4 cup brown sugar
1 pkg cream cheese
8 oz. cubed cheese
1 pound diced bacon
1/2 cup diced jalapenos.
The recipe for the taco is:
5 lbs ground meat
5 Tablespoons Morton Tenderquick
5 Tablespoons Taco Seasoning
8 oz. cubed cheese
1 can green chilies
Allow to sit overnight and smoke to an internal temperature of 152 degrees.
