The Bun
(Makes 6 Buns)
500g x Strong Bread Flour
7g x Fast Action Yeast (instant yeast)
30g x Caster Sugar
10g x Salt
25g x Melted Butter
300ml x Tepid Milk
1 x Egg (Beaten)
Sesame seeds
The Big Mac Sauce
120g x Mayonnaise
1 Tbsp x Sweet Onion (Finely Diced)
40g x Tomato Ketchup
10g x Yellow Mustard (American mustard)
5g x White Distilled Vinegar
1 x Dill Pickle (Finley chopped or grated)
5g x Caster Sugar
1g x Paprika
0.5g x Garlic Powder
0.5g x Onion Powder
Pinch of Salt
The Patty
(Makes 4 patties)
600g x Ground Beef Mince (15% Fat)
Salt and Black Pepper
Filling/Garnish
1 x Sweet onion (finely diced + pinch of salt)
1/2 x Iceberg lettuce (shredded) + squeeze of Lemon
Sliced Cheese
2 x Dill Pickles (sliced)
Butter to toast the buns
Method
1. To make the bread buns, Place the flour, yeast, caster sugar, salt, melted butter, and milk into a mixing bowl and mix to form a dough. Then knead until the dough feels silky smooth. You can do this in a mixer or by hand. Form it into a tight ball and place it back into the mixing bowl. Cover with a damp cloth and prove in a warm place for 1 hour.
2. While the dough is proving you can make the sauce. Place all of the ingredients into a bowl and mix until fully combined. You should instantly smell that familiar, famous big mac smell. Place into the fridge ready for later.
3. After 1 hour, turn the dough out onto a bench and punch the air out of the dough. Next, divide into 6 equal pieces and roll them into balls. Using a rolling pin, roll each dough ball to around 1.5cm in thickness and place it onto a lined baking tray. Cover with a damp cloth and prove for a further 30 minutes.
4. While the buns are proving for the final time you can prepare the burger garnish.
5. After 30 minutes, brush the buns with beaten egg and sprinkle them with sesame seeds. Bake in a preheated oven for 20 to 25 minutes or until golden.
6. For the burgers, divide the mince into 150g balls. Place a heavy frying pan over high heat and get it as hot as you can. Place the balls into the pan ad squash them down with a spatula. Season with salt and pepper and cook for 1 to 2 minutes on each side. You may need to do this in batches.
7. Before we assemble the big mac cut one bun in half and cut the middle section out of another bun to create the middle of the big mac. Toast the buns with some butter in a frying pan until golden.
8. To Assemble. Place down the bottom half of the bun and then spoon on some diced onions, followed by shredded iceberg lettuce, sliced cheese, a beef patty, and then some special sauce. Next add in the middle bun, more sauce, more lettuce, sliced pickles, another beef patty, and more cheese. Finally, top it off with the top half of the bun. Congratulation, you have now made a homemade Big Mac! Enjoy!
