[ ] 2 lbs boniato sweet potato
[ ] 2 1/2 cups coconut milk for blending
[ ] 1 cup soaked raisins
[ ] 2 Tbsp vanilla
[ ] 1 Tbsp cinnamon extract
[ ] 1 Tbsp almond extract
[ ] 2 Tbsp rum
[ ] 3 Tbsp melted butter
[ ] 2 1/2 cups brown sugar
[ ] 1 cup flour
[ ] 1/4 cup cornmeal
[ ] 1 tsp baking powder
[ ] 1 tsp salt
[ ] 2 tsp nutmeg
[ ] 2 tsp ginger powder
Custard on top almost finish
1/2 Cup coconut milk
2 tbsp brown sugar
¼ tsp salt
2 tsp vanilla
1 tsp cinnamon
1 Tbsp melted butter
Bake at 350 for 1hr 30 mins
Add custard after 1 hr then bake for another 30 mins
Makes 1 9 inch
