Spinach Ramen 🍜 Healthy Japanese Noodles with Philips Pasta Maker

I had been asked for spinach noodles recipes. As I had some at home, I wanted to try it with ramen. The taste is intentionally light so it's more about playing with colours. Please enjoy!

Ingredients for 500g flour mix - (for 4 to 5 people) :
125g spinach

438g bread flour
53g potato starch (katakuriko)
4g fine salt
4g baking soda
some water to topup the spinach puree into a 185g mix

Ingrédients pour 500 g de mélange de farine – (pour 4 à 5 personnes) :
125 g d’épinards

53 g de fécule de pomme de terre (katakuriko)
4 g de sel fin
4 g de bicarbonate de soude
un peu d’eau pour compléter la purée d’épinards afin d’obtenir 185 g au total
