After mastering the art of making fish paste from a previous video ( • Fish Paste and Fish Cake Fries ), here is a recipe to make bouncy fish balls from the fish paste.
Wheat starch is used as a binder and baking soda helps to give the desired bouncy texture. Using a cake mixer simplifies the traditional “beating” and “slamming” process of making the fish ball. The paste becomes very sticky so make sure your hands are wet when handling the paste barehanded otherwise it will be difficult and messy. Also, practice the technique of squeezing the paste and scooping with a spoon to form the balls.
