Moong Dal Tadka
Ingredients:
Moong dal -½ cup
Turmeric powder -½ tsp
Salt -½ tsp
Water -2 cups
Oil -1 tsp
Ghee -1 tsp
Mustard seeds -½ tsp
Cumin seeds -½ tsp
Asafoetida (hing) -a pinch
Garlic cloves -4–5 (crushed)
Curry leaves -few (chopped)
Green chillies -as per spice level (finely chopped)
Red chilli powder -¼ tsp
Tomato -1 (finely chopped)
Water -little (to adjust consistency)
Salt -¼ tsp (or as needed)
Lemon juice -to taste
Coriander leaves -2 tbsp (finely chopped)
Jeera Rice
Ingredients:
Basmati rice -1 cup
Water -6-7 cups (for boiling)
Lemon juice -few drops (for fluffiness)
Salt -as needed
Ghee -1 tbsp
Cumin seeds -1 tsp
Beans Fry
Ingredients:
Oil -1 tbsp
Cumin seeds -½ tsp
Curry leaves - a few (chopped)
Green chillies - 1–2 (slit)
Asafoetida (hing) - a pinch
Red chilli powder - ¼ tsp
Turmeric powder - ¼ tsp
Cumin powder - ½ tsp
Coriander powder - 1 tsp
Garam masala - ¼ tsp
Salt - add to taste
Water - ⅓ cup
Grated coconut - 2–3 tbsp
Coriander leaves - 2 tbsp (finely chopped)
Plain Dahi Raita
Ingredients:
Curd - 1½ cups
Black pepper powder - ½ tsp
Roasted cumin powder - ¼ tsp
Black salt - to taste
Regular salt - to taste
Asafoetida (hing) - a pinch
Coriander leaves - finely chopped
Cucumber Veggie Salad
Ingredients:
Cucumber - 1 (thinly sliced)
Carrot - 1 (thinly sliced)
Onion - 1 (thinly sliced)
Tomato - 1 (thinly sliced)
Green chillies - 1-2 (finely chopped)
Coriander leaves - finely chopped
Black salt - to taste
Black pepper powder - ½ tsp
Lemon juice - to taste
