Creamy, garlicky, and packed with flavor — this simple pasta dinner with shiitake mushrooms and juicy chicken is easy to make and seriously satisfying.
🍜 Recipe: Creamy Garlic Shiitake Mushroom Pasta with Healthy Chicken
🧂 Ingredients (2 servings):
Pasta – 160–200g (about 6–7 oz)
Chicken breast – 1 small (150–200g / 5.3–7 oz), boiled & sliced or shredded
Shiitake mushrooms – 200g (about 10–12 medium), sliced
Onion – ½ medium, thinly sliced
Garlic – 5 cloves, minced
Olive oil – 1 tbsp
Milk – 1½ cups (355 ml), preferably whole milk
All-purpose flour – 2 tbsp (16g), shake with milk to combine
Salt & pepper – to taste
Optional:
Soy sauce – ½ tsp
Chicken broth – replace part of the milk if desired
Grated cheese or parsley – for topping
📝 Instructions
1. Boil Pasta & Chicken:Bring two pots of water to a boil. Add a pinch of salt to each. Boil the pasta in one pot according to package instructions. In the other, boil the chicken breast for about 15 minutes or until fully cooked. Drain the pasta, reserving 1 cup of pasta water, and let the chicken cool before slicing or shredding.
2. Prep Ingredients:While the pasta and chicken are cooking, prep the other ingredients:
Slice the mushrooms and onion
Mince the garlic
Measure the milk and flour (keep separate until ready to use)
3. Sauté Veggies:Heat olive oil in a pan over medium heat. Add the onions and sauté for 5–7 minutes until softened. Then add the garlicand mushrooms, cooking for another 5–6 minutes, stirring occasionally.
4. Make the Creamy Sauce:Shake or whisk the flour into the milk until smooth, then pour into the pan. Stir constantly as it thickens into a creamy sauce. Season with salt and pepper to taste. Optional: Add ½ tsp soy sauce or a splash of chicken broth for extra flavor.
5. Combine Everything:Add the cooked chicken to the sauce and stir to combine. Then add the pasta and mix well until everything is coated. If the sauce is too thick, loosen it with some reserved pasta water.
6. Serve & Enjoy:Plate it up! Optionally top with grated cheese, parsley, or a drizzle of olive oil.
