VEGAN MUSHROOM BIRYANI – CHEF DAVE @Lalqilla

Recipe
Ingredients:
2 cups Lal Qilla Basmati rice
3 cups water
Sauté ingredients:
1 tbsp vegan ghee
2 cinnamon sticks
2 star anise
4 cloves
2 bay leaves
2 cardamoms
½ onion (diced)
1 tomato (diced)
3 garlic cloves + 1 inch ginger (pounded)
3 bird's eye chilies (slit in half)
1 tbsp biryani spice powder
1 tbsp chili powder
½ tbsp turmeric powder
Salt to taste
A little water
150g white mutton mushrooms (halved)
A few mint leaves (chopped)
A few coriander leaves (chopped)
Notes: You’ve got to try this Mushroom Biryani! It’s simple, delicious, and incredibly fluffy with @Lalqilla Basmati Rice. The long grains ensure every bite is perfect. You’ll adore the rich flavors and satisfying texture—definitely give it a try! 🥹😘😍
Cooking method:
1.Heat a pan, add vegan ghee, and let it melt. Then, add the cinnamon sticks, star anise, cloves, cardamoms and bay leaves. Stir briefly. Add the diced onion, garlic, ginger, and bird’s eye chilies. Sauté until fragrant.
2.Add the tomato, biryani spice powder, chili powder, and turmeric powder. Stir well and add a little water and salt. Mix again and let the spices cook through.
3.Add the white mutton mushrooms, chopped coriander, and mint leaves. Stir well, adjust the seasoning, and then transfer to the rice cooker.
4.Add the basmati rice and water. Stir to combine and cook as usual. Once done, let it cool slightly before serving. Enjoy!!!
