This one pan zaatar roasted vegetables and chickpeas is so good , flavorful and healthy and can be made on any day of the week. Zaatar a fragrant Middle Eastern spice mix brings this dish to life with the cucumber and tomato salad taking to even a higher level in taste and textures. Most of the ingredients are common pantry staples, that work so well together to make this a recipe to put on repeat. Make this recipe for a light lunch or top it with a protein for dinner. For Vegetarians and Vegans this is just so perfect .
For the vegetables
1 can chickpeas, drained and rinsed ( about 2 cups )
2 Medium broccoli heads, cut into florets
1/2 Cauliflower head , cut into florets
1 Large red onion, peeled and sliced
2- 3 Medium carrots, peeled and diced
1 Tbs zaatar spice mix
1 Tbs Garlic, chopped
2 Tbs Olive oil
1Tbs Lemon juice, optional
Parsley to finish and garnish
Salt and pepper
Side Salad
1 Cucumber, washed, deseeded and sliced
2 Vine ripe tomatoes
1/2 Red onion, peeled thinly sliced
1 Tsp Olive oil
1 Tsp Lemon juice and zest
Salt and pepper to taste
Parsley
Yogurt sauce
1/2 cup plain/ Greek yogurt
1Tsp lemon juice and zest
1 Tsp Olive oil
1/2 Tsp honey, optional
1 Tbs Parsley
Salt and pepper to taste
