🥔 Simple Poori Masala (No Tempering)
Yield: Serves 1–2

Ingredients:
Large potato – 1, boiled, peeled, and roughly mashed
Onion – 1 small, thinly sliced
Green chilli – 1, slit or finely chopped
Ginger – ½ tsp, finely chopped or grated
Curry leaves – 4 to 5 (optional)
Turmeric powder – ⅛ tsp
Salt – to taste
Water – ½ to ¾ cup
Oil or ghee – 1 tsp
Coriander leaves – 1 tsp, chopped (optional)
Lemon juice – a few drops (optional)
Method:
Heat Oil: In a small pan, heat the oil over medium heat.
Sauté Aromatics: Add green chilli, ginger, and curry leaves (if using). Sauté for 30 seconds until fragrant.
Cook Onion: Add the sliced onion and cook until soft and translucent, about 4–5 minutes.
Add Spices: Stir in turmeric powder and salt. Mix well.
Combine Potato: Add the mashed potato and mix until well combined with the onion mixture.
Adjust Consistency: Add ½ to ¾ cup water, depending on the desired thickness. Simmer for 4–5 minutes on low heat, stirring occasionally.
Finish: Turn off the heat. Stir in chopped coriander and lemon juice, if using. Serve hot.
🫓 Classic Poori
Yield: Makes 8–10 pooris

Total Time: 30 minutes
Ingredients:
Whole wheat flour – 1 cup
Salt – ¼ tsp
Oil or ghee – 1 tsp (optional, for softer dough)
Water – ¼ to ⅓ cup (as needed for kneading)
Oil – for deep frying
Method:
Prepare Dough: In a mixing bowl, combine wheat flour and salt. Add oil (if using) and mix. Gradually add water and knead into a firm, smooth dough. Cover and let rest for 10–15 minutes.
Roll Pooris: Divide dough into 8–10 equal portions. Roll each ball into a 4–5 inch disc on a lightly floured surface. Avoid making them too thin.
Heat Oil: In a deep pan, heat oil over medium-high heat. Test temperature by dropping a small piece of dough—it should rise immediately.
Fry Pooris: Gently slide in one poori at a time. Lightly press with a slotted spoon to help it puff. Flip and fry until golden brown on both sides. Remove and drain on paper towels.
Serve: Serve immediately with poori masala.
