Chilled Soba Noodles (ざる蕎麦 - Zaru Soba)

Chilled Soba Noodles or Zaru Soba (ざる蕎麦) is named after the bamboo strainer the cold noodles are often served on. After being boiled and chilled in ice water, the noodles are served with a concentrated dipping sauce called tsuyu, along with condiments such as wasabi, scallions, and nori. In this video, I’m going to show you how to make the dipping sauce and how to cook and present the soba noodles.

INGREDIENTS:
1 cup dashi 
3 tablespoons soy sauce
1 tablespoons sake
1 1/2 teaspoons sugar
2 servings soba noodles
1 teaspoon wasabi
1 scallion (finely chopped)
50 grams daikon (grated and drained) 
1/2 sheet nori (cut into thin strips with scissors)
