Ingredients: serves 2
2 Veal Cutlets (optional - use any Veal steak you wish)
1 cup dried breadcrumbs
2 eggs
1 cup flour
1/3 cup butter (optional - use canola oil instead)
Quick Potato Salad
4 baby potatoes
1 tsp olive oil
salt and pepper
1 tbls fresh herbs (parsley, dill, chives)
Serve with Potato Gratin if desired (see link below)
