I decided to make some cider vinegar because I had a few apples that were getting old. Here is how I did it.
My large jar holds approximately 2.5 gallons.
I chopped the apples I had after giving them a good scrub, removing any tags or stickers, bad or mushy spots and the stems. I placed the apple chunks in my jar and poured in enough filtered water to cover them. I then added 1/3 cup of sugar per gallon to the water and carefully stirred to incorporate the sugar into the water.
When the sugar was thoroughly incorporated, I placed a weight atop the apples to hold them below the water level. I covered the whole thing with a tea towel to keep out dust and other things, and placed the jar in a warm dark part of my pantry where it will ferment for 30 days. I will check it every 5 to 7 days to be sure things are fermenting well.
At the end of the 30 days I will bring you back and we will unveil our apple cider vinegar.
Please note the only constant in this recipe is the sugar amount of 1/3 cup per gallon.
