Vegan Cornbread
Makes about 15 squares / time 45+ min
1 red pepper
1 or 2 jalapenos
1 large onion
2 Tbs olive oil
1. Thinly slice red pepper, jalapenos and onion. Heat olive oil on medium high heat in saucepan. Sauté the peppers and onion for about 5 min.
2. Remove from heat.
3/4 cup organic stone ground corn meal
1 cup all purpose unbleached flour
¼ cup sugar
3 tsp baking powder
1 tsp sea salt
2 Tbs chipotle pepper ground up
1 ¼ cup almond milk
3 Tbs canola oil
1. In large mixing bowl, add corn meal, flour, sugar, baking powder, sea salt and ground chipotle pepper. Whisk together.
2. Add almond milk and canola oil to dry ingredients. Mix thoroughly.
3. Grease rectangular glassware dish with oil or Earth Balance Shortening and pour in cornbread batter.
4. Add sautéed veggies to top and place in preheated oven at 400 degrees for 20 min.
5. Let cool, remove baking glass and cut into squares.
