MUSHROOM & TOFU CONGEE(汤泡饭) is a childhood memory of my breakfast: my father rarely cooked, but the smell of his rice soup always woke me up when I was still in bed. It is actually a classic recipe that many Chinese families use to utilize leftover rice. How to make congee?

CHINESE VEGAN RECIPE | MUSHROOM & TOFU CONGEE [Jook, Rice Porridge ] This Congee is AWESOME!
Ingredients:
(2 servings)
150g rice
a small piece of dried seaweed (Dashi Kombu)
2 dried shiitake mushrooms
500 ml of water
10 g of ginger julienne
100 g shredded smoked tofu
1tbsp oil
150 g king oyster mushroom
1 tsp sugar1 tbsp light soy sauce
1 tsp pepper powder
1 tbsp olive oil
250g canned chickpeas
pea shoots or mâche

How to grow your own pea greens?
Take about 5 tablespoons of green or brown peas.
Soak the peas in plenty of water for 12 hours.
After the soaking time, rinse the peas thoroughly, put them in a sprouting jar and let the whole thing germinate for 3 days. Water the sprouting jar 2 - 3 times a day.
After the germination period, fill a medium bowl about 2 cm high with soil. Spread the pea seedlings on it and cover them with a thin layer of soil.
Place the tray near the window and let it grow for about 8 to 10 days. After that, the pea greens can be harvested.
