Gur Wali Roti
Gur wali roti, also known as jaggery roti or gur ki roti, is a traditional Indian flatbread made with jaggery (gur) as one of the main ingredients. Jaggery is a type of unrefined sugar commonly used in Indian cuisine.

Here's a step-by-step guide to prepare gur wali roti:
In a mixing bowl, combine the whole wheat flour and grated jaggery.
Gradually add water to the mixture and knead it into a soft dough. Adjust the water quantity as needed to achieve the right consistency. The dough should be smooth and pliable.
Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
After resting, divide the dough into small portions and shape them into balls.
Take a dough ball and flatten it into a disc using your hands. Dust it with some flour to prevent sticking.
Roll out the disc into a circular roti using a rolling pin. The thickness can be adjusted according to your preference.
Heat a tawa or griddle over medium heat. Place the rolled roti on the heated surface.
Cook the roti for a minute or until you see small bubbles forming on the surface. Flip it over and cook the other side.
Apply a little ghee or oil on both sides of the roti while cooking. This helps in making it more flavorful and prevents sticking.
Once cooked, remove the roti from the tawa and repeat the process with the remaining dough portions.
Serve the gur wali roti hot with a side dish of your choice. It pairs well with yogurt, pickle, or any curry.
