A rich, moist banana bread with coffee and chocolate in every bite.
Small batch, easy to make, and perfect with a cup of espresso.
Ingredients (Half Batch )
Unsalted butter (52g)
1 tbsp vegetable oil (12g)
6 tbsp light brown sugar (75g)
1 large egg
tsp vanilla extract
1 tsp instant coffee + ½ tsp hot water
2 extra ripe bananas, mashed
Greek yogurt (60g)
all-purpose flour (approx. 115 g)
1tsp baking powder
1\2 tsp baking soda
1\2 tsp salt
chocolate chips or chopped chocolate (50g)
Bake at 340°F for 40-45 minutes.
NOTES -
Sugar: Brown sugar adds moisture and caramel flavour. White sugar works, too.
No chocolate: Skip the chips for plain banana bread or swap with nuts or peanut butter chips.
Storage: Stays fresh 1–2 days at room temp, or up to 5 days in the fridge. Reheat before serving.
