Healthy version of vegetable cutlets with the addition of oats in it. A must try recipe !
MIXED VEGETABLE OATS CUTLET
Ingredients
¼ cup finely chopped mixed bell peppers
¼ cup grated cauliflower
¼ cup grated carrot
½ cup chopped spinach leaves
½ cup oats
1 tablespoon olive oil + for shallow-frying
2-3 spring onion bulbs, finely chopped
1 tablespoon chopped garlic
¼ tablespoon chopped ginger
Crushed black peppercorns to taste
½ teaspoon dried oregano
½ teaspoon fresh thyme
½ teaspoon red chilli flakes
Salt to taste
1 tablespoon chopped fresh parsley
1-2 spring onion greens, finely chopped
¼ cup brown breadcrumbs
1 egg
Method
1. Take oats in a bowl. Sprinkle some water, mix and set aside to soak.
2. Heat 1 tablespoon olive oil in a non-stick pan. Add spring onion bulbs and sauté till translucent. Add garlic and ginger and sauté for 30 seconds.
3. Add mixed bell peppers and mix well. Add cauliflower, mix and cook for 2-3 minutes. Add carrot and spinach leaves, mix and cook for a minute.
4. Add crushed peppercorns, oregano, thyme and chilli flakes and mix well. Add soaked oats. Mix and cook for 1-2 minutes.
5. Add salt, parsley and spring onion greens and mix well. Transfer in a bowl and cool.
6. Add breadcrumbs and egg and mix well.
7. Grease palms with some oil. Divide the mixture into equal portions and shape them into patties.
8. Heat some olive oil in a non-stick pan. Shallow-fry each patty till golden. Drain on absorbent paper.
9. Serve hot.
Preparation Time: 12-15 minutes
Cooking Time: 15-18 minutes
