It is a very famous style of biryani from Hoskote, a town near Bengaluru. Here are some key points about it:
Unique Style: Unlike regular Hyderabadi or Donne biryani, Hoskote Dum Biryani is prepared in huge vessels (handis) and cooked on wood fire.
Meat Focused: Traditionally, it’s a mutton biryani, with very tender, spicy pieces of meat. The masala is quite fiery.
Timing: It’s sold mostly in the early morning hours (from 5 AM onwards). By 9–10 AM, it’s usually sold out.
Cooking Method: The rice (seeraga samba or short-grain rice) and mutton are cooked together in dum style, with layers of masala and rice sealed to trap the aroma.
