DAY 1- 12 DAYS OF CHRISTMAS COOKIES 2025 | VLOGMAS DAY 1 2025 | COFFEE PECAN DELIGHTS

Welcome to my 3rd annual 12 Days of Christmas Cookies! I'm so excited to kick off the holiday season with you and your family. I hope you enjoy hanging with me for the next 12 days.

This recipe is from "A Cowboy For Christmas" by Annie Jones:
COFFEE PECAN DELIGHTS
4tsp instant coffee powder (I used espresso)
1tbsp hot water
2 large egg whites
1/8tsp salt
1c granulated sugar
1c crushed to fine crumbs vanilla cookies (Nilla Wafers)
1c chopped pecans

1.Preheat oven to 300 degrees F, grease cookie sheet or use parchment paper
2. Dissolve coffee in hot water, stir and let cool.
3. With an electric mixer beat egg whites and salt on high until stiff.
4. Add coffee and mix, then add sugar and mix
5. Drop by the teaspoonful 2" apart onto cookie sheet. Bake 15min (I did about 13min) or until golden brown.
Makes about 3 dozen.
