Vitamin C and Iron Absorption: The Farce of Popeye

In this video, I talk about why vitamin C is necessary for iron absorption, and how the cartoon Popeye was a terrible depiction for eating spinach and creating muscle growth (Sailors were known for having scurvy, caused by a vitamin C deficiency).
What we do know is that even though spinach has oxalates in it, which may inhibit absorption of minerals like iron and calcium, if eaten with vitamin C you can enhance the absorption of the minerals. Furthermore, if you consume caffeine, which inhibits absorption of vitamin C, you may also be inhibiting your absorption of iron.
So, to maximize iron absorption, try to get some vitamin C in the morning, along with a high iron breakfast. Do this well before you start drinking your morning coffee, that way the caffeine doesn't interfere with your nutrient absorption.
