Our South Of France itinerary (the brief version):
Day 1:
checked in to accommodation
walked through Old Town Nice
Colline du Château

Day 2:
took the train to Menton in the morning and explored.
In the afternoon we took the train to Cap D’Ail station and walked to Mala Beach to swim (about 15 min walk from station)
Got takeaway pizza in Old Town Nice and took it to the beach.

Day 3:
Took the train to Villefranche-ser-Mer - walked through Old Town, then headed to the beach for a swim.
Had lunch back in Nice at Focà (focaccia sandwich spot)
In the afternoon we took the train to Monaco - explored the yachts, casino, F1 track and got ice-cream.
Dinner in Old Town Nice

Day 4:
took the train to Beaulieu-sur-Mer station, walked to Paloma Beach (50 min walk from station, you can take the bus instead). Spent the day at the beach here.
Sunset walk along the Nice promenade and grabbed dinner.
