Mutton stew, beef stew, and chicken stew are famous in Kerala for breakfast dishes. This is a simple chicken stew recipe by my mom and I love to have it with Appam, Idiyappam, Puttu or Bread. For the complete recipe of this stew, please read further.
🥣 Ingredients 🥣
Chicken - 1kg
Potatoes - 2 medium sized (cubed)
Carrot - 1 nos (diced)
Onion - 2 medium sized (sliced)
Garlic - 10 nos (sliced in two halves)
Ginger - 2 tsp (sliced)
Green chillies - 5 to 6 nos (slit)
Curry leaves - 4 springs
Cardamom - 10 nos (lightly crushed)
Cinnamon - 2 pcs
Cloves - 7 nos
Star anise - 2 nos
Peppercorns - 10 nos
Garam Masala - 1/2 tsp
Black pepper powder - 1/2 tsp
Coconut milk (thala paal) - 1 cup
Coconut milk (randaam paal) - 1.5 cups
Coconut oil - 2 tbsp
Salt to taste
🍳 Method 🍳
Step 1: Heat a pan and add coconut oil
Step 2: When the oil is hot, add whole masalas (cardamom, cinnamon, star anise, cloves, and pepper corns). Stir and fry for a minute.
Step 3: Add sliced onions and stir to fry until translucent. You can add 1/4 tsp salt to it in between.
Step 4: Once the onions are translucent, add sliced garlic and ginger and fry on medium heat for 2 minutes.
Step 5: Add slit green chillies; add curry leaves; stir to fry on medium heat.
Step 6: Add corn flour to get the consistency. Alternatively, you can add Maida (all purpose flour) or cashew paste.
Step 7: Add chicken pieces and cook until its color changes. Add salt to taste.
Step 8: Add potatoes and cook on medium heat for 2 minutes.
Step 9: Add diced carrots and cook on medium heat for 2 minutes.
Step 10: Add coconut milk (randaam paal), mix the stew lightly, and cook for 15 minutes by covering.
Step 11: Add garam masala and black pepper powder. Add coconut milk (onnam paal or thalappaal). Mix lightly and stop the fire.
Step 12: Add curry leaves and cover and keep the stew for a few minutes before serving.
