This blueberry apple oatmeal cake is nutritious, moist and refreshing with a lot of fruit! It does contain a little added sugar with the honey, but you can leave that out if you prefer.
Here`s what you need...

Healthy Blueberry Apple Oatmeal Cake
INGREDIENTS (6-8 servings)
1/2 cup (80 grams) blueberries, fresh
1/2 tbsp (2,5 grams) oat flour
1 + 1/3 cup (130 grams) rolled oats
1 cup (240 grams) hot milk of choice
2 eggs (110 grams)
1/3 cup + 2 tsp (90 grams) Greek yogurt
3 tbsp (30 grams) honey (optional)*
1/4 cup (50 grams) mild olive oil**
1 tsp (2,5 grams) vanilla extract
1 + 1/2 tsp (7 grams) baking powder
2 cups (210 grams) apple chunks
INSTRUCTIONS
1. Grease and line a 20 x 8 cm (8 x 3 inch) cake tin. Set aside.
2. Take a small bowl and pour the blueberries into it, along with the oat flour. Mix with a spoon until all blueberries are slightly covered with the flour. This will prevent them from sinking to the bottom while baking. Then set the bowl aside.
3. Take a large bowl and pour in the oats and hot milk. Stir until well mixed and let the oats soak for 10 minutes.
4. While they`re soaking, pre-heat the oven on 180C (360F).
5. After 10 minutes, add the eggs, Greek yogurt, honey, olive oil, vanilla extract and baking powder to the oat-milk mixture. Stir with a spoon until all ingredients are fully incorporated.
6. Add the apple chunks and oat flour covered blueberries. Shortly stir them in.
7. Transfer the batter to the lined cake tin and distribute it evenly with a spoon or spatula.
8. Place in the oven and bake for 45-50 minutes on 180C (360F).
9. Take it out of the oven and let it cool on a rack in the tin for 20 minutes.
10. Take the cake out of the tin an let it cool on a rack until completely cooled.
11. Transfer to a cutting bord or plate, slice into pieces of preference and enjoy!
NOTES
You can leave the honey out if you don`t like any added sugar in this cake.
** Altough overall this amount of oil is not much for an entire cake, you can decrease the amount to 4 tbsp (32 grams) if you want.
