Juicy One Pan Whole Roasted Chicken & Veggies
This is one of my go to recipes because it's easy, budget friendly, and you can make 2-3 different meals with the same chicken!
Ingredients:
1 Whole Chicken between 4.5 to 5 pounds, giblets removed *For larger or smaller chicken see notes below
About 2 Tablespoons of your favorite Rub or use 1 Tablespoon Salt & 2 teaspoons ground Black Pepper
3 large Carrots, peeled & cut into about 2 inch pieces
Your choice of potatoes – about 1 pound
Whole Brussels Sprouts, trimmed *optional
Preparation:
Rub chicken with seasoning all over as well as inside the chicken. Try to get some seasoning underneath the skin of the breast. Flip chicken over so the breast side is facing down, cover with plastic wrap & refrigerate for 1-2 hours or up to 24 hours if desired
Remove chicken from fridge & uncover & let set out on the counter while you prepare your veggies so the chicken has time to come up to room temperature.
Preheat oven to 420 degrees Fahrenheit. Lower your middle oven rack by 1 level.
Cook in cast iron pan or roasting pan for 1 hour. No peeking!
If your chicken is under 4.50lbs (but not less than 4lbs), shorten the cooking time by about 10 minutes. If your bird is between 5-5.5lbs, extend the cooking time by about 10 minutes.
Temperature should be 165 degrees, or if no thermometer, the juices should run clear when you pierce between skin & the meat next to the thigh with the tip of a knife.
The method I use should give you a perfectly cooked & juicy chicken, but if you're not feeling comfortable, use either method listed above to check the doneness.
Tent the pan with some aluminum foil. Let the chicken rest for 15-20 minutes before cutting. This gives the chicken time to let the juices redistribute. The chicken will also continue to cook after you remove it from the oven due to the residual heat.
