「素食」超百搭的万能番茄红酱 |【Vegan】Homemade Tomato Sauce

Every summer, I usually make some tomato sauce. Ripe tomatoes in summer are rich in the umami. After cooked for a long period of time, the flavor get to concentrate. This tomato sauce can be used for making soups, pizza, and pasta. I didn't put too much spices in it, so it's more flexible! For example, you can add some oregano to turn it into pizza sauce, or adding chili to make it as soup base for rice noodles.
每到夏天番茄好吃的时候我都会做一些番茄酱,夏天成熟的番茄含有丰富的谷氨酸鲜味物质,我们经过长时间熬煮把它的鲜味得到浓缩,就可以游刃有余的运用到料理中,平时没时间做饭的朋友我特别推荐做这个,一次做一周的量,这样你不管是做面、汤、饭、披萨、三明治等等利用它让料理更好吃,我认为它相当于一个高汤。
做的时候不需要放其它香料,这样用途更广,不仅可以做中式也可以做西式,比如做披萨时可以加入一些牛至叶,三明治时你也可以加入一些罗勒,或是煮面煮米粉时可以加入辣椒,运用会更灵活!
Ingredients/材料:
番茄 1.4kg Tomatoes
胡萝卜 160g Carrot
口蘑 8个 Eight Mushrooms
月桂叶 1片 One Bay Leaf
姜末 5g Minced Ginger
黑胡椒和盐 适量 Black Pepper and Salt
Tips:
1. The quality of my tomatoes is good enough. It is already delicious without adding other seasonings. Tomatoes without natural ripeness are usually more sour and lack tomato flavor. You can add some sugar and tomato paste for better result.
因为我的番茄质量够好,不需要加其它调味就已经很美味了,没有自然成熟的番茄通常会更酸番茄味不足,如果你使用的是这种可以酌情加点糖和番茄酱或是用番茄膏更好
2. Cooking time varies depending on your stove. When the liquid is gone, it means the sauce is ready.
这个炖煮时间不是固定的,这个分量差不多小火1小时,如果分量更少时间也会减少,更多时间则会更长,以水分熬干为准,但至少要熬到半小时以上
3. You don’t need to look after the pot for the first 30 mins. After, turn it over every 10 minutes for the next half hour. In addition, don’t mash the tomatoes at the beginning, as it will easily splash and burn the pot when cooking.
熬煮是前半小时不用看锅,后面半小时要每隔10分钟翻一次,另外不要先将番茄打成泥熬煮,那样熬煮时会很容易飞溅,并且容易糊锅
4.Carrots are added to replace onions for natural sweetness
加入胡萝卜是为了代替洋葱增加天然的甜味
