Simple Egg fried rice | With Left over rice | 5 Minutes Cooking Time
2 Eggs
You can add more if you prefer. I added 3 eggs.
Pinch of Salt & Pepper
Beat the eggs well
2 Tbsp Soy sauce
You can use sauce if your choice.
You can also add sauce at a later stage and skip it now.
2.5 Cups Leftover cooked rice from day before
You can use fresh cooked rice but you will have to cool it down completely
Mix well
Keep aside
Alternative way is to cook egg separately first and then add it to wok at a later stage.
Heat a wok on high heat
3-4 Tbsp Oil
Heat oil till it is smoking hot
2 Spring onion Whites & Greens
( Keep handful of green part for garnishing.)
1 Red Chilli finely chopped
You can add more or less according to your taste.
Saute till flavors infuse in the oil on medium to low heat
Add the egg and rice mixture
Turn the flame to high and stir fry till every grain of rice becomes separated.
When egg is no longer liquidy, you can add
very finely chopped veggies like carrot, potato, peas if you want veggies in the fried rice.
Once the fried rice is done, taste it and adjust salt or sauce if required.
Handful of Spring Onion greens
Mix well
Switch off the gas
Serve hot with your choice of condiments or side dish.
Notes and Tips:
You can cook egg separately as shown in one of my previous videos and then add it at a later stage.
If veggies are finely chopped and added they cook faster
Cooking on high heat allows vegetables to retaking moisture
You can use oyster or schezwan sauce or even chilli oil or chilli paste instead of soy sauce or combine a few ingredients together according to your taste
You can also add garlic with spring onions to add more flavor to the fried rice
