New Mexico boasts one of the most unique and delicious cuisines in the world. At the heart of this cuisine is traditional New Mexico Red Chiles (yes, chile not chili). This sauce is used in a variety of traditional Northern New Mexico dishes such as enchiladas, posole, tamales, huevos rancheros, burritos, and so many more!
It is made by grinding dried chile peppers, usually hatch or Chimayo grown (a cultivar of capsicum annum), into a fine powder that is used to make red chile sauce.
It’s also super easy to make with some practice!
Ingredients:
1/3 cup vegetable oil
2-3 garlic cloves, minced finely
1/3 cup AP flour
2-3 cups water
Salt & pepper to season
