🍦 Homemade Rum and Raisin Ice Cream
Ingredients:
1/2 cup raisins
1/4 cup dark rum (or to taste)
1 can (397g) sweetened condensed milk
2 cups (480ml) double cream (heavy cream)
1 tsp vanilla extract
Optional: pinch of cinnamon or nutmeg for extra warmth
Instructions:
Soak the Raisins:
In a small bowl, soak the raisins in dark rum for at least 4 hours, or preferably overnight, to allow them to plump up and absorb the rum.
Whip the Cream:
In a large mixing bowl, use a hand mixer or stand mixer to whip the double cream until stiff peaks form.
Mix the Base:
In another bowl, mix the sweetened condensed milk, vanilla extract, and a splash (1–2 tbsp) of the rum leftover from the raisin soak (optional, for stronger flavor).
Combine:
Gently fold the whipped cream into the condensed milk mixture.
Add the soaked raisins and fold them in as well.
Optional: Add a small pinch of nutmeg or cinnamon if you like a spiced note.
Freeze:
Transfer the mixture to a freezer-safe container.
Cover and freeze for at least 6 hours, or overnight, until firm.
