Easy One Pot Chicken & Rice Recipe - Simple Chicken Pulao Recipe For Beginners
In this video I showed the basic steps for making a chicken pulao. Everything happens in one pot and it is very easy to put together if you know some basic tricks. For any pulao or biryani recipe the main hurdle is to keep the rice grains intact and separate which I have discussed in detail how to cook the rice. Please remember that a lot depends on the quality and type of rice grains which vary from brand to brand. Some grains may require little less water than the given proportion or the rice may get fully tender in just 15 minutes (in that case instead of keeping it on low heat for 5 more minutes, take it off heat). So you may need a few tries to come to that sweet spot. So do not lose your patience if your first try is unsatisfactory. It took me a long time to grasp the tricks and cook the perfect rice for a pulao or biryani.

Ingredients Required For Making chicken and rice- serves 8
Chicken with bones - 1.36 kg/3 lb approx
Onion - 400 gm/14 oz/2 large
Tomato - 250 gm/9 oz/ 4 large
Ginger - 2 tablespoons finely grated
Garlic - 2 tablespoons finely grated or you can use 3 tablespoons of ginger garlic paste.
Dried bay leaf / tejpatta - 2
Cinnamon stick / dalchini - 2 inch length
Green cardamoms / small elaichii - 4 to 5
whole cumin seeds / jeera - 1 teaspoon
Curry powder - 2 heaped tablespoons.

Turmeric powder - 1 teaspoon
Kashmiri red chili powder - 1 tablespoon. You can use 1 teaspoon red chili powder instead or maybe cayenne pepper. Adjust the proportion according to your level of tolerance.
Garam masala powder - 2 teaspoons heaped.

Ground coriander/dhania powder - 1 tablespoon
Ground nutmeg/jayfal - 1/4 th teaspoon
Salt - 1& 1/2 tablespoons or as per taste
Sugar - 2 teaspoons
Rice - 3 & 1/2 cups Basmati rice
Hot water - 7 cups. Please use chicken broth if using boneless chicken.
Butter - 2 tablespoons
Oil - 2 tablespoons
Coriander leaves (dhaniapatta) - as much your prefer
For Raita -
coriander leaves with stalks
Plain unflavored yogurt(regular or greek yogurt) - 4 tablespoons heaped
chaat masala - 1 teaspoon. You can even dry roast a teaspoon of whole cumin seeds on low heat, crush it in a mortar & pestle and use it if you do not get chaat masala.
Salt - as per taste
Sugar - a pinch
freshly ground black pepper
Serve this pulao with raita or any salad of your choice.
