Chimichurri
Ingredients
• ½ Cup olive oil
• ¼ Cup red wine vinegar
• 1/2 cup finely chopped parsley
• 3-4 cloves garlic, finely chopped or minced
• 1 red dry pepper
• 1 lime
• 3-4 scallions (optional)
• ¼ cup dried oregano
• Rosemary (optional)
• 1 level table tablespoon coarse salt (to taste)
• 1 Teaspoon of Black pepper (to taste)
Instructions
1. Mix the dry oregano, red dry and salt together with warm water.
2. Mix the rest of ingredients together in a bowl. Allow to sit for 5-10 minutes to release all the flavors into the oil before using. Ideally, let it sit for more than 2 hours, if time allows.
3. Chimichurri can be prepared earlier than needed, and refrigerated for 24 hours, if needed, it will last you up to 15 days.
Note: Chimichurri is best used to baste meats (chicken, pork chops or steaks) while grilling marinade, but choose to drizzle our meats with chimichurri instead.
