This is the German alternative to Macaroni & Cheese. Kaese Spaetzle, a Southern German type of egg noodle with Cheese and caramalized onions.

Käse Spätzle Recipe:
Spätzle Dough:
3 cups all purpose flour
2 teaspoons salt
4 eggs
1/2 cup water
In a mixing bowl add your flour and salt, mix to incorporate. Add eggs and water and mix them with a wooden spoon to break up the eggs. Incorporate the flour to the egg mixture then beat this mixture until a bubbles start to appear and you have a smooth batter. If the batter is too stiff add a bit more water. Cover bowl with cling wrap and set aside.
This is a good time to shred your cheese and make your caramelized onions.
Bring salted water in a large pot to a boil.
Dip your Spätzle board or a cutting board with a broad handgrip to hold on to into the boiling water to wet the board. Place a small amount of the dough onto the board. With a a flat metal spatula spread your dough over the board. Dip your board with dough and your spatula into the water to moisten, then shave off small straps of dough and push them into the water. Dip your board and spatula in the water from time to time to keep the dough from sticking.
Lift out the spätzle When they rise to the surface of the water and left them drian in a colander. Repeat until all the dough is used.
Caramelized Onions:
3 large onions, peeled
5 tablespoons butter
Melt butter in a Dutch oven. Add the onions and stir occasionally for 30 minutes or until deeply caramelized.
Cheese:
12 ounces Emmentaler cheese, shredded
To assemble:
In a oven safe casserole dish butter to coat the inside. To your warm spätzle add 1 tablespoon of butter and season with salt and pepper to taste. Start layering the spätzle and cheese into the casserole dish ending up with cheese ontop. Bake in a 400 F degree oven for about 15 minutes or longer until cheese is melted and edges just start to get a little crispy.
Top with your caramelized onions and chopped chives and serve.
