This easy and delicious casserole can be made in advance and features all your favorite breakfast classics! It feeds a crowd, and it takes very little effort to make. It's a meal all on its own. It is perfect for holidays and get togethers. This is such a fabulous breakfast casserole recipe. Here’s the guide you’ll need.
Breakfast Casserole Recipe | Egg & Sausage Casserole
Ingredients:
2 pounds breakfast pork sausage (sage, maple, regular or hot)
1 small yellow onion, diced
8-ounce sweet mini peppers, deseeded & diced
1 canned 4 oz (120g) mushrooms pieces & stems (or fresh mushrooms)
12 large eggs
1 cup Greek yogurt
1/2 cup heavy cream
1 1/2 cups shredded sharp cheddar cheese, divided
2 garlic cloves, minced
1/4 teaspoon cayenne red pepper
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 tablespoon finely chopped fresh parsley
Finely chopped fresh chives, garnish

Note: 1. Choose any sausage you enjoy for this recipe.
2. Store leftovers in an airtight container in the fridge for up
to 4 days or freeze up to 2 months.
3. You can change the cheese, if you’d like. Try goat,
Parmesan, Swiss, Feta, or Gruyere cheese.

Directions:
1. Preheat oven to 350°F/180°C.
2. Heat a large skillet/pan over medium high heat. Cook sausage until brown, breaking it into pieces
using wooden spoon, about 13 to 15 minutes. Remove from heat and set aside.
3. On the same pan/skillet, drain off all but two tablespoons of grease. Sauté onion, sweet peppers, mushrooms over high heat for 4 minutes. Add minced garlic and sauté for another 1 minute. Remove from heat and set aside.
4. In a large mixing bowl, combine a dozen (12) eggs, Greek yogurt, heavy cream, and finely chopped parsley. Whisk until well combined.
5. Add sausage, onion-mushroom mixture, and 1 cup shredded sharp cheddar cheese. Stir all the ingredients in the casserole dish. Add salt, black pepper, and cayenne pepper. Whisk everything until combined.
6. Pour egg mixture on top of sausage and vegetable mixture. Top with remaining (1/2 cup) of cheddar cheese.
7. Bake in preheated oven for 30 to 35 minutes or until edges are slightly golden or set.
8. Slice the breakfast casserole into squares and season it with freshly ground black pepper. Garnish with chopped chives or green onion, if desired.
9. Serve immediately and enjoy!🥘
