QUICK AND EASY BEEF PARES INSTANT POT VERSION |

Beef Pares or Pares as carinderia vendor call this dish, is a meal that consist of braised beef, beef flank and/or beef brisket in a sweet and salty sauce paired with garlic fried rice and a bowl of beef broth soup as a regular combo.
This roadside diner-style establishments known as Pares Houses, specialize in serving this dish alongside different variety of SILOG meals (Tapsilog, Longsilog, Tocilog and Porksilog among others). This economical meal has been the survival food for student on their high school and university days from small eateries around school zone.
Here are the ingredients:
1 kilo Beef Brisket cut into cubes
6 cloves Garlic (minced/chopped)
1 medium size Onion (chopped)
1 thumb size. Ginger (chopped)
1/2 cup Soy sauce
1/4 cup Brown sugar
4 pcs Star anise
3 pcs Bay leaves
1 tsp Ground pepper
1 tsp Salt
1 tsp Cornstarch
3 tbsp Cooking oil
1 pc Spring onion (for garnishing)
1 tbsp. Dark soy sauce (for colour)
Instructions
1. Using your Instant pot, set to Saute mode and Pre boil the beef briskets in a pot with water to remove the scum and blood.
2. Scoop/take out scums floating on the surface until clear.
3. Cover Intstant pot, into Meat/Stew mode on High for 15 minutes.
***INSTANT POT WILL COME UP TO PRESSURE THEN WILL START THE 15 MINS PRESSURE COOKING COUNT DOWN
4. After 15 mins, do a NATURAL RELEASE for 15 mins to lower down the pressure then do a QUICK RELEASE.
5. Transfer the meat to a bowl and set aside and let it cool to touch.
6. Strain beef stock and reserve for later use.
7. When beef cool down, Cut beef into bite sizes.
8. Wash Instant pot inner pot and wipe dry for sautéing.
9. Set Instant pot to Saute mode and saute ginger, onion and garlic until soft and fragrant.
10. Add the beef and saute until it renders fats.
11. Add soy sauce and strained beef stock.
12. Add bay leaves, star anise, salt, brown sugar, beef cube, and dark soy sauce.
13. Cover Instant pot and turn knob into sealing.
14. Set Instant pot into Meat/Stew mode on High for 15 minutes.
***INSTANT POT WILL COME UP TO PRESSURE THEN WILL START THE 15 MINS PRESSURE COOKING COUNT DOWN
15. After 15 mins, do a NATURAL RELEASE until all pressure is release.
16. Open Instant pot and adjust taste to your liking
17. Add cornstarch slurry to thicken the sauce. Add dark soy sauce to enhance colour.
18. Cover Instant pot and simmer until tender to your liking.
19. And we are ready to serve.
20. Garnish with spring onion and serve with garlic fried rice and beef soup.
