Sweet Mince Pies For Christmas - And Icing The Christmas Cake.

This is how to make sweet mince for your christmas sweet mince pies. This traditional christmas recipe has to be done a few weeks before you make your homemade sweet mince pies so that the filling can mature. So this one is about the homemade sweet mincemeat and in a later video closer to xmas I will use it in the homemade sweet mince pies.

Filling

75g / 2.6oz Sultanas 0.18
75g / 2.6oz Raisins 0.17
75g / 2.6oz Currents 0.26
75g / 2.6oz Mixed peel 0.48
½ tsp Cinnamon 0.02
80g / 2.8oz Brown Sugar 0.27
35g Butter 0.26
1 Lemon 0.10
1 Orange 0.30
50ml Whisky / Brandy 1.00

Pastry

200g / 7oz Plane Flour 0.10
25g / 0.8oz Icing sugar 0.07
60g / 2.1oz Butter 0.45
60g / 2.1oz Lard 0.12
1 Egg 0.13
2 tbsp cold water 0.00

Will make 8 sweet mince pies 0.51 each.


Put all of the filling ingredients into a large pan and bring to a simmer. Simmer for 10 mins.
Leave it to cool completely and then place in an airtight sterile jar and leave for 1 month.

In a bowl rub the butter and lard into the flour.
Add the icing sugar and mix well.
Beat the egg and add it and the water to the mixture.
Bring the mixture togethers into a pastry.
Place in the fridge for at least two hours.

Roll the pastry out to about 2mm thick and cut into rounds.
Put them into a well greased muffin/yorkshire pudding tin.
Spoon in the sweet mince. Make lids and cover the pies.
Bake in the oven for 20 - 30 mins at 170c / 338f / gas mark 4.

When cooled, dust with icing sugar.
