RECIPE: PASTRY INGREDIENTS: 3 1/4 cups flour, 1 tsp salt, 6 1/2 tbs butter, 8 tbs lard, 3/4 cup hot water.
PASTRY INSTRUCTIONS: Mix flour and salt together, keep separate. Bring water to a low boil on the stove, add butter and lard and melt down. Remove from stove. Make a well in the flour and add hot liquid. Stir with a wooden spoon.Knead dough, portion out to fill 4 4” diameter little tins and a lid for each. After filling the tins, refrigerate until firm with lids separated with waxed paper.
RECIPE: FILLING: 1 pound ground beef or lamb, 1 tsp salt, 1 tsp pepper, 1/2 tsp marjoram, 1 tsp mace,1 chopped onion, 2 cups beef stock, 2 tbs olive oil, 2 bay leaves.
FILLING DIRECTIONS: Sauté onions and olive oil, add seasonings and salt and pepper to taste, add ground meat. Fry till cooked, add beef stock, 2 bay leaves. Cook on simmer covered for 10 to 15 minutes. Strain meat, and cool. Save stock for later to make light gravy
Preheat oven to 350•F Fill pastry pies with filling to top, make a little opening in center of meat and fill with a tsp of beef broth, close up. Put lids on and crimp edges. Brush with egg wash. ( mix whisked egg with little milk) place in oven. Bake at 350•F for 40 minutes. Cook on BOTTOM RACK ( so bottoms arent doughy) Last 5 minutes of cooking, place In middle rack
Just before pies are ready mix a little cornstarch( 1 tbs) with 1/4 cup cold water, then add to remainder beef broth on stove. Cook and stir till thickens. When ready to serve, pour gravy over pie. ENJOY 😊
Can be served with mashed potatoes and a vegetable, I like to serve with green peas and mashed potatoes!
