ukiyo-e hojicha tiramisu is inspired by ukiyo-e, traditional Japanese woodblock prints, and flavored with hojicha, a Japanese roasted green tea with a warm, nutty aroma.

【recipe】
2 large egg yolks
15 g granulated sugar
2 large egg whites
45 g granulated sugar
60 g cake flour
1 g baking powder
powdered sugar, as needed
1.In a bowl, combine the egg yolks and 15 g granulated sugar. Whisk until
pale and slightly thickened.
2.In a separate bowl, beat the egg whites with a hand mixer until foamy.
Gradually add 45 g granulated sugar in two additions and beat until soft,
glossy peaks form.
3.Gently fold the meringue into the egg yolk mixture. Sift in the cake flour
and baking powder together, and fold until just combined.
4.Transfer the batter to a piping bag and pipe onto a baking sheet lined
with parchment paper.
5.Lightly dust the tops with powdered sugar. Bake in a preheated 180°C
(350°F) oven for 15 minutes, until lightly golden.
roasted green tea cream
100 g cream cheese
50 g plain yogurt
35 g granulated sugar
150 g heavy cream (40% fat)
10 g hojicha powder
(roasted green tea powder)
coffee soak
1 tbsp instant coffee
150 g hot water
topping
50 g dark chocolate
6.Bring the cream cheese to room temperature until soft.
7.In a bowl, mix the cream cheese and granulated sugar until smooth.
8.Add the yogurt and mix until well combined.
9.In a separate bowl, combine the heavy cream and hojicha powder. Whip
with a hand mixer until soft peaks form.
10.Gently fold the hojicha whipped cream into the cream cheese mixture to
make the hojicha cheese cream.
11.Dissolve the instant coffee in the hot water and set aside.
12.Dip the ladyfingers briefly into the coffee soak and arrange them in a
serving dish.
13.Spread half of the hojicha cheese cream evenly over the ladyfingers.
14.Repeat another layer of soaked ladyfingers and hojicha cheese cream.
15.Pour the melted dark chocolate over the surface and let it set.
16.Dust with cocoa powder. Place a clear stencil cut with a ukiyo-e pattern
on top, then dust with powdered sugar to finish.
