Ingredients::: 😋 👌 🤤 😄
For the Dough (Shell)
1 cup all-purpose flour (maida) or whole wheat flour
1 tbsp fine semolina (sooji/rava) (optional, for texture)
1.5 - 2 tbsp hot ghee or oil
A pinch of salt
Warm water or a mix of milk and water, as needed to knead the dough
For the Filling (Stuffing)
½ cup dry coconut (grated or desiccated)
½ cup roasted gram dal (dalia/pappu)
½ cup powdered sugar or jaggery
2-3 green cardamoms (ground into powder)
Optional additions: chopped cashews, almonds, or raisins
Oil for deep-frying
Heat oil:
Heat oil in a deep pan or kadai over medium heat.
Deep-fry:
Gently drop 3-4 kajjikayalu into the hot oil at a time, depending on the size of the pan.
Cook: Fry on a low-medium flame, turning them occasionally, until they are crisp and a light golden or white color. Avoid browning them too much.
Once cooled completely, store the kajjikayalu in an airtight container where they will stay fresh for 10-12 days. 😄😋🤤😄
