I planted some ginger from ginger pieces with “eyes” or growth buds that have rooted. To help them root, I wrapped them in a damp paper towel and placed the ginger root pieces in a cool dark place. Make sure you check your ginger every few days and wet the paper towel if they are starting to get dry. It took about a couple of weeks for roots to sprout for my ginger pieces.
I planted the sprouted ginger root pieces in the middle of spring in a fabric pot. They were planted with the growth buds facing up, about 6 inches deep, 6 -8 inches apart in well draining soil. I watered them only when the top inch solid became dry.
It should take 8-10 months for ginger to be ready for harvest. You will see it’s leaves have died down. However, as winter approached, I was worried that the cold would damage them. I could have waited for another month or two for the ginger to mature further but I decided to harvest them already. Here’s how I harvested ginger!

► Harvesting Ginger - My Experience Growing Ginger Root
What You’ll Need:
pruning shears
digging knife or hori hori knife
Directions:
Prune back the ginger plant by cutting the stems about 6 inches from the base of the plant using pruning shears.
Using a digging knife or a hori hori knife, loosen the soil around the ginger. Once the solid has loosened, start pulling the ginger by holding the stem from the base. Be careful not to break the stems off. After you've pulled the stems out and exposed the ginger root, tap the whole thing to remove the soil.
Once you have pulled out all the ginger root, wash it well with clean water. It would be easier if you use a hose as the water pressure will help clean the dirt from the ginger root’s nooks and crannies. As you're cleaning it, remove the smaller roots.
Store the fresh unpeeled ginger root in the crisper drawer of your refrigerator. Place it in a zip lock or plastic bag and make sure it is airtight to prevent molds. The ginger root will keep for 2 months.
