Here’s the recipe for one of my favorite and easiest dishes to get the party started...artichoke flatbread! Like I’ve said, this is so versatile and you can make it many different ways - plenty of bread and topping options. Choose your own flatbread adventure, and enjoy!
2 cups canned or jarred grilled artichokes
1/2 cup parmesan cheese
3 cloves garlic
1 lemon juiced and zested
EVOO
S&P
1/2 cup pitted green cerignola or castelvetrano olives
1/4 cup basil
1/4 cup parsley
Foccacia, ciabatta, or Italian bread
Mozzarella pearls or bocconcinis (cut into quarters if using bocconcinis)
1) Preheat oven 425
2) All of the ingredients go in the food processor except the mozzarella and basil, season with salt & pepper. Don’t overmix it! We don’t want baby food, keep it nice and coarse. Fold in chopped basil
3) Schmear the mixture onto the bread
4) Top with quartered baby artichokes, mozzarella and grated parmesan
5) Bake in oven for 10 minutes until golden brown, and then for a few minutes under the broiler
6) Top with freshly grated parmesan cheese
