Recipe:
美國肉眼扒:100克 American Ribeye:100g
澳洲肉眼扒:100克 Australian Ribeye:100g
鹽:適量 Salt:as needed
黑糊椒:適量 Black Pepper:as needed
芝士醬: Cheesy sauce:
葛瑞耶爾起司:163克 Gruyere Aop Cheese:163g
艾曼塔起司:163克 Emmentaler Cheese:163g
生粉:適量 Corn Starch:as needed
白酒:300毫升 White Wine:300 ml
漢堡醬汁: Burger Sauce:
酸瓜:90克 Pickles:90g
蛋黃醬 ( 或沙律醬 ):110克 Mayonnaise :110g
法式芥末醬:20克 Dijon Mustard:20g
甜洋蔥碎:30克 Minced Sweet Onion:30g
甜洋蔥:適量: Sweet Onion:as needed
生菜 ( 切絲 ):適量 Lettuce (shredded):as needed
美國芝士:適量 American Cheese:as needed

1.先製作「MAC R」醬: 混合蛋黃醬(或沙律醬)、法式芥末醬、酸瓜和洋蔥,然後冷藏至粘稠
First, prepare the “MAC R” burger sauce: Mix mayonnaise ( or salad dressing ), Dijon mustard, pickles, and minced onion. Chill until it thickens.
2.用鹽醃肉眼扒後吸乾水份,切成小塊,放入攪拌機攪碎 (牛肉絞碎前要先去筋),再用黑胡椒調味
Seasoned the steak with salt, pat it dry, and cut it into cubes. Place in a food processor and mince (remove sinew before mincing). Season with black pepper.
3.把牛肉碎分成100克一份,然後搓成一個球狀 (過程需反覆拍打牛肉,讓空氣排出)
Measure out the minced beef into 100-gram portions and roll each one into a big meatball (Give the beef balls a few good slaps to remove trapped air )
4.將洋蔥切成厚度大約1cm後煎香
Slice the onions to about 1cm thick and pan-sear until fragrant
5.用大火把未過期的白酒煮滾,同時把生粉與刨好的硬芝士混合
Bring some unexpired white wine to a boil on high heat. Meanwhile, mix cornstarch with freshly grated hard cheese
6.把火關小,然後一點點放入芝士,讓它慢慢溶化後備用
Turn the heat down, add the cheese in bit by bit, letting it melt slowly. Set aside
7.用細火溶化牛油,然後將漢堡兩面都烘至金黃色即可
Melt some butter on low heat, then toast both sides until golden brown
8.放兩個肉丸在已經預熱到超高溫的煎鍋上,拿重物用力壓下去,計時1分鐘15秒
Place two meatballs on a preheated super-hot pan. Press down hard with something heavy and cook for 1 minute 15 seconds till the surface is nicely seared and fragrant.
9.煎至表面焦香後翻轉後再壓1分15秒。
Flip and press again for another 1 minute 15 seconds.
10.放些美國芝士在肉餅上面,並組合漢堡,完成!
Place American cheese slices on the patties. Stack with buns, sauce, and toppings to complete the burger. DONE!
