🥕 Homemade Veg & Vermicelli Spring Rolls Recipe
Ingredients (for about 10–12 rolls):
• 100g vermicelli noodles (soaked in warm water until soft, drained)
• 1 medium carrot (julienned)
• 1 cup cabbage (julienned)
• 1 stick celery (julienned)
• 2 tbsp fresh coriander, chopped
• 1 small piece ginger, finely julienned
• 2 tbsp sweet chili sauce
• 1 tbsp oil (for stir-frying)
• Spring roll wrappers (mini & large sizes)
• Oil for deep frying (or air frying)

Method:
1. Soak Vermicelli: Place vermicelli noodles in warm water for 5–7 minutes until soft. Drain and cut into smaller lengths.
2. Prepare Filling: Heat 1 tbsp oil in a pan. Add ginger, carrot, cabbage, celery, and stir-fry on high heat for 2–3 minutes.
3. Add Flavour: Mix in vermicelli noodles, sweet chili sauce, and coriander. Toss everything well. Let cool.
4. Roll It Up: Place a spoonful of filling on a spring roll wrapper. Roll tightly, sealing edges with water/flour paste. Repeat for mini and large rolls.
5. Cook:
• Deep Fry: Fry in medium-hot oil until golden and crispy.
• Air Fry: Brush lightly with oil and air fry at 180°C for 12–15 minutes.
