You can make this healthy & delicious eggplant dip/spread at home with just a few ingredients. So good served with pita, crudite or as a shmear on a sammich!
Baba Ghanoush
4 Asian Eggplant or 1 to 2 Italian/Globe Eggplant
Extra Virgin Olive Oil
1 teaspoon Salt
1-2 cloves Garlic, grated or finely minced
½ teaspoon Ground Cumin
2-3 Tablespoons Tahini
Juice of ½ Lemon, or to taste
Preheat oven to 425 degrees Fahrenheit. Coat each eggplant with a little EVOO. Bake in middle rack of oven for 20-25 minutes. If using Italian or Globe Eggplant cook for 30-40 minutes. Remove from oven and let cool for about 15 minutes or until you’re able to handle them without burning your fingers. Remove skins & discard.
Finely chop eggplant- it should have small but even texture. Place in bowl.
Season with Garlic, Salt, Cumin, Tahini & Lemon. Stir well to combine & taste.
Adjust seasonings to taste if needed.
Can serve either at room temperature or chilled with Pita, crudite or as a yummy spread as part of your sammich fixings.
*I like to let the Baba ghanoush hang out for about 15 minutes before serving so the flavors have a chance to marry, otherwise I make this a day in advance and keep it in the fridge.
