Corn Chowder Soup
Corn Chowder is a creamy Western-style soup made with sweet corn, potatoes, onions, celery, and milk. When prepared with chicken stock, it becomes richer and more flavorful, giving a light savory depth while still keeping the natural sweetness of corn. Warm, hearty, and comforting—perfect for continental menus and home cooking.
Corn Chowder Soup – 4 Portions
Vegetables
1. Pureed fresh corn – 250 g
2. Corn kernel optional 50 gram
3. Potato, diced – 1 medium
4. Onion, chopped – 1 medium
5. Carrot, diced – 1 medium
6. Celery, diced – 30 g
7. Garlic, chopped – 15 g
8. Red capsicum, diced – 2 tbsp.
Fats & Thickening
9. Butter – 1 tbsp.
10. Oil – 1 tbsp
11. Refined flour (Maida) – 2 tbsp
Liquids
12. Chicken stock – 1 liter
13. Milk – 100 ml
14. Fresh cream – 30 ml (optional)
Seasoning
15. Salt – 1 tsp
16. Black pepper – ½ tsp
17. Thyme or oregano – ½ tsp
Garnish
18. Chopped spring onion – 1 tbsp.
Method
1. Heat a soup pan and add oil and butter.
2. Add chopped garlic and sauté slightly.
3. Add onion, celery, and carrot. Cook until they soften.
4. Add refined flour and sauté for a minute to remove the raw taste.
5. Add the pureed corn and mix well.
6. Pour in the chicken stock. Stir and bring to a boil.
7. Add diced potatoes and corn kernels.
8. Reduce the heat and simmer for 10 minutes or until potatoes are cooked. Add red capsicum
9. Add salt, pepper, and thyme/oregano.
10. Switch off the flame and add milk (and cream if using).
11. Mix gently and adjust seasoning
12. Garnish with spring onions and serve piping hot.
