These rolls are perfectly crispy on the outside and tender inside. You can adjust the amounts to your taste, and any thin, flexible flatbread (like lavash) will work beautifully.
Ingredients:
Filling:
1 medium bell pepper, finely chopped
1 medium onion, chopped
2 mild hot shishito peppers, chopped
5–6 mushrooms, chopped
3–4 cloves garlic, minced
50 g parsley, finely chopped
200 g ground meat
1 tbsp tomato paste
Salt, black pepper, turmeric, paprika, and oregano — to taste
100 g shredded mozzarella cheese
For wrapping:
Lavash bread (or any thin, rollable flatbread )
For the dip (adjust amounts as you like):
Greek yogurt
Fresh dill, chopped
Lemon juice
Salt and pepper
Garlic, minced
Instructions
1. Prepare the filling:
Heat oil in a pan. Sauté the onion, garlic, peppers, mushrooms, and bell pepper until they are softened.
Add the ground meat and cook until browned. Stir in tomato paste, parsley, and seasonings.
Let the mixture cool completely.
2. Assemble the rolls:
Place a rectangular piece of lavash on a flat surface.
Spoon some filling in the center, and sprinkle mozzarella on top.
Fold the long sides inward, then fold over the edges to secure
3. Fry the rolls:
Heat oil in a pan. Place the rolls seam-side down first to keep them sealed.
Fry until golden and crispy on all sides.
4. Make the dip:
In a bowl, mix Greek yogurt, dill, lemon juice, garlic, salt, and pepper.
5. Serve & Enjoy!
Serve the hot, crispy rolls with the refreshing yogurt dip.
