🥘 *Authentic Mutton Yakhni Pulao Recipe | Traditional Home Style | Step-by-Step Tutorial*
This royal-style Mutton Yakhni Pulao is rich in flavor, aromatic with whole spices, and perfect for any festive meal! 🌿

✨ *Ingredients:*
For Yakhni (Stock):
1 Litre Water
3 Garlic pods (whole)
6 tsp Coriander seeds
1 kg Mutton
2 Medium Onions (sliced)
1½ tsp Salt
For Rice:
1 kg Sela Basmati Rice (washed & soaked for 1 hour)
For Masala:
1 small bowl (or 3 tbsp) Oil
4–5 Medium Onions (sliced)
1 tsp Salt
5–6 Green Cardamoms
8–9 Cloves
2 tbsp Black Pepper
2 Black Cardamoms
2–3 Cinnamon Sticks
2–3 Bay Leaves
5–6 tbsp Ginger-Garlic Paste
1 cup Curd (yogurt)
4 tsp Salt (adjust to taste)
1 Nutmeg (Jaiphal), 1 tsp Mace (Javitri), 3–4 Cardamoms (powdered)
Few drops of Kewra Essence
Yellow Food Color (optional)
2–3 tbsp Ghee
Fried Onions (for garnish)

🔥 *Cooking Method:*
1️⃣ *Make the Yakhni (Stock)*
In a cooker, add 1 litre water, mutton, garlic, coriander seeds, onions, and salt.
Cook for 5–6 whistles or until the mutton is tender.
Strain it, separate the meat and discard garlic & coriander. Keep the Yakhni aside.
2️⃣ *Prepare Fried Onions*
Heat oil in a deep pan. Add sliced onions with 1 tsp salt and fry until golden and crispy.
Remove half and keep aside for garnish.
3️⃣ *Cook the Masala*
In the same oil, add ground spices (elaichi, laung, kali mirch, dalchini, badi elaichi, tej patta).
Sauté for a few seconds, then add ginger-garlic paste and cook until raw smell goes.
Add curd and roast the masala till oil separates.
4️⃣ *Add Meat & Yakhni*
Now add boiled mutton pieces into the masala. Add 4 tsp salt and cook for 2–3 minutes.
Then pour 5 cups reserved Yakhni + 7 cups plain water (total 12 cups).
Bring to a boil.
5️⃣ *Add Rice*
Add soaked rice and cook until most of the water is absorbed.
Sprinkle jaiphal-javitri-cardamom powder, add kewra essence and food color.
6️⃣ *Dum Cook*
Place a tawa under the pot, cover with lid, and cook on low flame for 15–20 minutes.
Finally, drizzle ghee, fried onions and serve hot with raita! 🤍
